Porridge with Frozen Summer Berries


It took me thirty seven years to fall in love with porridge - to be honest I wasn't sure I even wanted to - childhood memories of grey gloopy stuff in a bowl was not my thing. Don't get me wrong my parents never forced it on me - but they are my memories of it all the same.

I have made several attempts to like it in the past - I'm not getting any younger - I had to think of things like lowering my cholesterol and other such concerns nearing the big 4-0 bring!

It was all around me - or perhaps I was subconsciously listening for it - porridge is so good for you and you'll love it - even Neven Maguire couldn't tempt me with his MacNean House Irish Mist Porridge - well I got there in the end. 

My ritual starts the night before -soaking the oats really helps - that added creaminess is a real draw for me. The berries (bought fresh and frozen at home) add a burst of sharpness all of which is balanced by the honey. So don't wait like I did go on, try it!  

Serves 1

Ingredients
30g Porridge oats
200ml Milk (add more if necessary) 
Handful of frozen berries
Honey

Method
Place the porridge and milk into a deep bowl and allow to soak overnight in the fridge. 


The next morning microwave on FULL (800W) for 3 minutes. Allow to stand for 1 minute in the microwave. Carefully remove the scalding hot porridge from the microwave, add a handful of frozen berries and a drizzle of honey. Serve immediately. 


This is my morning lifeline, the porridge to sustain me through the day, the honey for that sugar rush and the berries - well they are just plain tasty! 



No Microwave? No Problem...


If the microwave is not your thing then try this instead - place the porridge and milk in a small heavy based saucepan. Bring to the boil over a medium to low heat - stirring all the time - once boiled reduce the heat and simmer for 2- 3 minutes until thick and creamy. Serve immediately.  


Freezing What Now!


Carefully rinse the berries in a sieve, shake off the excess water - very important to get rid of all the excess water otherwise the berries will freeze in one large clump! Place the berries in a single layer on a baking tray lined with kitchen paper. Freeze for 6-8 hours or until solid.  


Once frozen, place the berries into a suitable container or freezer bag, label and store in the freezer until needed. All summer berries can be frozen this way and then used for porridge toppings, smoothies, muffins and tarts
